 Ingredients: 700gr Potatoes,2 Onions, 2 Tomatoes, 2 Garlic cloves, 1 Ibertejo packed fillet, salt and pepper, 1 dl of Olive oil, 1 dl white wine, ½ spinach, 300gr of cauliflower, 1 tablespoon of butter, coriander
Method 1 Peel the potatoes and cut in half and boil. Remove the potatoes before they are fully cooked 2 Place on a tray with the onions and tomatoes chopped. Add the garlic finely chopped and on top place the folded fillets.3 Season with salt and pepper and drizzle the olive oil and the wine. Place in a pre-heated oven at 220º for about 15 to 20 minutes. 4 Meanwhile cook the spinach and the cauliflower. Season. Melt the butter and pour on top of the spinach and the cauliflower. Serve with the fillets and potatoes. Decorate with coriander. |
